Desserts That Diabetics And Candida Sufferers Can Eat


Almond Butter Cookies
Yield: about 5 dozen cookies

Ingredients
1/2 cup softened butter
1/2 cup almond butter, stirred well
2/3 cup warmed agave nectar (cut this in half if you have candida overgrowth or infection)
1/4 teaspoon salt
1/2 teaspoon vanilla
1 egg
1-1/2 cups coconut flour
3/4 teaspoon baking soda
1 cup almonds, chopped

Directions

1. In a large bowl, beat butter, almond butter, agave, salt, vanilla, and egg.

2. Mix the flour and baking soda together.

3. Then mix the flour/baking soda mix into the almond butter combination.

4. Finally, fold in the chopped nuts and blend gently.

5. Cover the bowl with a lid and refrigerate overnight.

6. With a teaspoon, drop batters onto a greased baking sheet.

7. Bake for about 12 minutes. Cookies are done when they are light brown in color.


Shortbread
Shortbread is one of the few cookies that has a low Glycemic index.
Yield: 3 dozen cookies

Ingredients
1/2 cup grass-fed butter
1/4 cup warmed agave nectar (cut this in half if you have candida overgrowth or infection)
1/2 teaspoon vanilla
3/4 cup whole wheat flour
1/4 cup blanched almond flour
Pinch of salt
1/8 teaspoon baking soda

Directions

1. In a large bowl, beat the butter, making it creamy.

2. Add the agave and vanilla. Then continue beating the mixture.

3. In another bowl, mix together the almond flour, whole wheat flour, salt, and baking soda.

4. Mix half of the flour mixture into the large bowl with the butter, agave and vanilla. Mix well.

5. Add the remainder of the flour mixture, mixing well.

6. Refrigerate the batter overnight.

7. Line a baking sheet with parchment paper, sprinkled with almond flour. Then sprinkle flour on the dough and press onto the baking sheet. You don’t need a rolling pin for this. The shortbread should be about one-fourth inch thick.

8. Cut dough into squares or use cookie cutters to cut out shapes for upcoming holidays.

9. Bake at 350 degrees Fahrenheit for about 15 minutes.
