Desserts You Can Eat If Allergic To Wheat

Directions

1. Preheat oven to 350 degrees Fahrenheit. Using the coconut oil, grease an 8-inch x 4-inch loaf pan.

2. In a medium-sized mixing bowl, mix the honey, milk, applesauce, raisins, carrots and spices. Pour into a saucepan, simmering for about 5 minutes. Set aside and let cool.

3. Mix the salt, baking soda, baking powder and 2 teaspoons water in a small bowl.

4. In a small bowl, mix the almond flour, coconut flour, and mesquite flour. Add to the honey mixture and stir. Fold in the nuts.

5. Pour into loaf pan. Bake for 50 minutes.


Carob Candy

Yield: 6 dozen pieces

Ingredients
1 cup honey
1/3 cup carob powder
Pinch of sea salt
2 tablespoons butter
2 teaspoons vanilla
1/2 cup almond butter
1-1/2 cups almond flour
1-1/2 cups coconut flour

Directions

1. In a small pot, mix the honey, carob powder, butter and salt. Then bring to a boil and let it boil for one minute.

2. Remove the pot from the heat and add the vanilla, nut butter and flours.

3. Stir. Then drop onto baking sheet in teaspoonfuls and let harden.


Wheat-Free Brownies

Makes 12 brownies.

Ingredients
2 squares unsweetened chocolate
1/2 cup butter
2 eggs
1/2 teaspoon salt
1/2 cup applesauce
1/2 cup honey or 1/2 cup coconut crystals with an additional 1/2 cup water
1 cup almond flour
1/2 teaspoon vanilla
1/2 cup chopped walnuts

Directions

1. Preheat oven to 350 degrees Fahrenheit.

2. Melt the chocolate and butter without burning it. Let cool.

3. With a small mixer, beat the eggs until they form froth and foam.

4. Next add salt. Continue beating until egg mixture thickens.

5. Add the honey gradually and continue beating 30 seconds.

6. Blend in the chocolate and butter mixture, as well as the applesauce.

7. Add the almond flour, vanilla and finally, the nuts. Stir.

8. Pour into a greased pan and bake at 350 degrees for 40 minutes. Test for doneness.
