1. C is your best choice. A contains too many carbohydrate foods. B contains waffles – a high carb food. Powdered sugar is another high carb food. Syrup is like a straight IV of sugar into the bloodstream.

2. A is your best answer. The carbohydrates are well balanced in this meal. Although the salad contains maple syrup walnuts, there are very few of them to add a lot of carbohydrates. The pizza is a high carbohydrate food; the flour has a high Glycemic Index and the cheese is another carbohydrate. The sandwich may seem like a good choice; however, whole wheat bread has a Glycemic Index of 77 and will cause an insulin reaction that will raise triglycerides. The French fries in the meal don’t help the matter at all either.

3. B is your best answer. When potatoes or rice are cold, their starch is broken down a lot slower in the body than if they are freshly cooked. However, this doesn’t mean you can still eat a lot of them! Limit them. A baked potato has a Glycemic Index greater than 85 and will cause a rapid rise in blood sugar, followed by high insulin levels and then high triglycerides.

5. Your best answer is B. Coconut flour is considered a fat, not a carbohydrate. The little bit of honey in the cookie will be offset by the fat. Cookies made from whole wheat flour will have a high Glycemic Index. Cookies that are gluten-free also tend to have a high Glycemic Index.
